Amish White Bread

Makes 2 loaves.

Ingredients

  • 2 cups warm water (110°F / 45°C)
  • ⅔ cup white sugar
  • 1½ tablespoons active dry yeast
  • ¼ cup vegetable oil
  • 1½ teaspoons salt
  • 6 cups bread flour

Instructions

  1. Dissolve sugar in warm water in a large bowl, then stir in the yeast. Let stand until yeast forms a creamy foam, about 5–10 minutes.
  2. Mix oil and salt into the yeast mixture.
  3. Mix in flour one cup at a time, until a soft dough forms.
  4. Turn dough out onto a lightly floured surface and knead until smooth and elastic, about 7–8 minutes.
  5. Place dough in a well-oiled bowl, turning to coat all sides. Cover with a damp cloth and let rise until doubled in size, about 1 hour.
  6. Punch down dough, then knead for a few minutes. Divide in half.
  7. Shape each half into a loaf and place into two well-oiled 9×5-inch loaf pans.
  8. Let rise until dough is about 1 inch above the pans, about 30–40 minutes.
  9. Preheat oven to 350°F (175°C).
  10. Bake for 30 minutes, or until golden brown and loaves sound hollow when tapped on the bottom.
  11. Optional: brush tops with melted butter for a soft crust.
  12. Let cool before slicing.
